- Roll out the puff pastry on a lightly floured surface and cut out round discs using a cookie cutter.
- Pinch one side of each disc to suggest a shell shape. Score decorative lines with the tip of a small knife, taking care not to cut through.
- Whisk the egg yolk with the milk and brush evenly over the shaped pastry.
- Arrange the shells in the air fryer basket in a single layer, leaving space between them. Air fry at 360°F (180°C) for 10–15 minutes, until fully puffed and evenly golden. Cook in batches if needed.
- Remove the shells and let them cool completely before filling.
- Thinly slice the salad greens and season lightly with salt and black pepper.
- Add the drained shrimp and cocktail sauce, then mix gently until evenly coated.
- Once cooled, carefully slice each puff pastry shell open. Fill with the shrimp mixture, place a mozzarella pearl in the center, and close gently.
- Serve immediately, or refrigerate until needed.
- Store unfilled shells at room temperature for a few hours once fully cooled. Once filled, refrigerate and consume within 24 hours for best texture. Freezing is not recommended.
