- Combine rolled oats, almond flour, baking powder and cinnamon in a mixing bowl and stir to blend.
- Add eggs and honey and mix until smooth and evenly combined.
- Fold in the diced apple and the chopped walnuts.
- Pour the batter into a silicone pan suitable for the air fryer (7–8 in / 18–20 cm) and smooth the top.
- Top with whole walnuts, chopped pistachios and a drizzle of honey.
- Air fry at 320°F (160°C) for 30 minutes, until golden on top and a toothpick inserted in the center comes out clean with a few moist crumbs.
- Cool completely in the pan, then slice and serve.
- Store in an airtight container: up to 2 days at room temperature or up to 4 days in the fridge. Rewarm briefly in the air fryer before serving.

Extra Tips
To keep the crumb soft, use room-temperature eggs and avoid overmixing the batter — it should look just combined, not overworked.
