What You’ll Need
7 oz (200 g) fresh spinach
1 egg
3 tbsp grated Parmesan cheese (30 g)
3 tbsp breadcrumbs (30 g), plus extra if needed
1.4 oz (40 g) provola cheese, diced
Salt and black pepper to taste

How to Make Spinach Balls in the Air Fryer
Cook the spinach in a small pot with a little water for a few minutes until wilted. Drain well and squeeze out every bit of liquid.
Chop the spinach finely or pulse it briefly in a food processor.
In a bowl, mix the spinach with the egg, Parmesan, breadcrumbs, salt, and pepper until you get a soft but compact mixture. If it feels too moist, add a touch more breadcrumbs.
Shape small balls with your hands, pressing a cube of provola into the center of each one.
Place them in the air fryer basket, making sure they don’t overlap, and cook at 360°F (180°C) for about 15 minutes, turning halfway through, until golden and slightly crisp.
How to Store Them
Keep any leftovers in an airtight container in the fridge for up to two days. Reheat them in the air fryer for three or four minutes to bring back their crispiness. You can also freeze them — either raw or cooked — and air-fry straight from frozen by adding a few extra minutes.
