There’s something magical about these almond puff pastries — they’re crisp, buttery, and filled with the kind of almond cream that makes you close your eyes after the first bite. Forget croissants for a minute. These pastries are lighter, easier, and every bit as satisfying.
They’ve been blowing up on Instagram lately, and once you try them, you’ll understand why. The filling is silky and nutty, made from toasted almonds, milk, and a touch of vanilla. The air fryer works wonders here, giving the pastries that perfect golden crunch without turning your kitchen into a sauna.
You can splash in a bit of rum if you want extra depth, but honestly, it’s the quality puff pastry that makes all the difference. Choose a good one — it’s what turns this simple recipe into a bakery-level dessert.
What You’ll Need
- 1 sheet puff pastry
- ⅔ cup (80 g) whole almonds
- ½ cup (120 ml) milk
- 1 egg yolk + 1 whole egg
- 1 ½ tbsp sugar (20 g)
- 1 tbsp cornstarch (10 g)
- 2 tsp butter (10 g)
- ½ tsp vanilla extract
- A handful of sliced almonds
- Powdered sugar, for dusting

How to Make Almond Puff Pastries in the Air Fryer
Toast the almonds in the air fryer at 340°F (170°C) for about 6–8 minutes, until fragrant. Let them cool, then blend into a fine paste.
Warm the milk until it’s just about to boil. In a bowl, whisk the egg yolk and sugar until pale, then mix in the cornstarch. Slowly pour in the hot milk while stirring constantly. Return to the pot and cook over medium heat until it thickens into a smooth, glossy cream.
Stir in the butter, almond paste, and vanilla extract. Cover with plastic wrap directly on the surface and let it cool completely.
Roll out the puff pastry and cut it into even rectangles. Spoon some almond cream in the center of each piece, fold over, and seal the edges with a little water or egg white. Brush with the beaten egg mixed with a splash of milk, sprinkle sliced almonds on top, and air fry at 355°F (180°C) for 15–18 minutes, until puffed and beautifully golden.
Let them cool for a few minutes, then dust with powdered sugar — they smell so good you’ll want to skip this step, but trust me, the sugar makes them sparkle.
How to Store Them
Keep the pastries in an airtight container for up to 2 days at room temperature, or in the fridge for up to 4. Reheat in the air fryer for a minute or two to bring back that just-baked crispness.
Flavor Up!
Add a touch of orange zest to the filling, or drizzle melted dark chocolate over the top once cooled. They’re perfect for brunch, coffee breaks, or any time you need a quick homemade treat that looks (and tastes) straight out of a patisserie.
